Tom’s Tom Yum Soup Recipe

As promised, here’s Tom’s “Tom Yum” soup recipe…
Tom Yum is the most famous of Thai soups, being very popular in Thai restaurants in the US. It is a clear sour soup which is flavored with fresh lemon grass and kaffir lime leaf. The most well-known version uses shrimp (in Thai: goong, koon, kung), but you may also use firm white-flesh fish (see Tom Yum Taleh) or chicken (gy or kai).
Ingredients
4 cups of water
2 stalks fresh lemon grass, trim off the very end of the root and smash with the side of a cleaver of chef’s knife; cut into 1 inch pieces; or 2 pc dried
3 slices fresh galangal root(smashed) or 2 pc dried
3 fresh kaffir lime leave or 4 pc dried
1 Tbsp. tamarind paste, with or without seeds
1 Tbsp. fish sauce, Golden Boy preferred
3/4 lb shrimps, medium to large size, shelled and de-veined; butterfly if desired
12 fresh Thai chili peppers, whole or 2 medium sized jalepenos, cut lengthwise into 1/4-inch strips.
1/2 small white onion, cut 1/4 inch slices
2 Tbsp. roasted chili paste (nam prik pao)
1 (16 oz.) can straw mushrooms, drained and rinsed
1 small ripe tomato, cut into wedges 1/4 inch thick
1 small lime, squeezed
2 sprigs fresh cilantro
Preparation
Bring water to boil over high heat in a medium-sized saucepan. Add the lemon grass, galangal, kaffir lime leaf, fish sauce and tamarind paste (break apart the tamarind paste with your fingers as you add it). Add the shrimp, bring to a boil and cook 3 minutes. Add the onion, nam prik pao and straw mushrooms. Boil for another 7 minutes until the shrimp is cooked through. Add the chile peppers and tomatoes. Turn off the heat. Add the lime juice. Taste to adjust the seasoning, adding fish sauce to taste. Garnish with cilatantro if desired and serve. Serves 3 to 4.

Massive thanks to everyone who ‘felt like putting their hands up in the air’ (and in the T for tune shape too) in the Club tent last Sunday at the Big Chill Festival – Eastnor Castle.
I landed on Saturday to catch the likes of Emiliana Torrini, Alice Russell on the Castle Stage, over to Krafty Kuts causing mash up mayhem and finally Orbital raving it up on the main stage.
On the Sunday I played a two hour set of end of night anthems and classic One More Tunes with an old friend, the legendary old school promoter/DJ/MC Ribbz (aka Sean Hill) working the crowd on the Mic.* see note 1
Yet again I had the challenge of following a stand up comedy session featuring Russell Howard, Dylan Moran and Noel Fielding! When I got to the tent it was packed, mostly with people sitting down on rugs and mini deck chairs having picnics..lol!
But didn’t take long for myself and Sean to get the place jumping.

Note 1*A bunch of us hardcore Cornish ravers including myself and Richard D James, used to take a bus to Plymouth to hear Sean spin alongside US DJ’s like Joey Beltram and Moby playing the craziest R&S hoover techno and acid, and most notably, Sean also hosted one of The Aphex Twin’s earliest live performances, he and I both worked at Mighty Force Records which was our local source for the freshest imported dance music. Without Richard D James teaching me studio production, Sean making me dance all night and Mighty Force releasing my first records I probably wouldn’t be writing this!

Next I’ve given Maximo Park a retro remodel with a proper back to ’89 Techno flavour for their single ‘Let’s Get Clinical’ as a tribute to the sound of Warp Records who celebrate their 20th anniversary this year.
No resting for me, back into the studio to remodel Florence And The Machine’s cover of the Candi Staton classic ‘You Got The Love’, this time slowing things down to 110bpm for a chugging cosmic disco vibe perfect for Ibizan sunset sets!
We’re at the peak of the Summer Festival season and I’m off to for the Big Chill. Set in the beautiful grounds of Eastnor Castle. Weather forecast looking great so can’t wait! Playing after The Mighty Boosh’s Noel Fielding in the Club Tent on Sunday.
It’s all about the One More Tune’s and I will be playing an anthology of end of night anthems with hands in the air sing along classics and deeper cuts covering everything from Rock and Rave, House and Dubstep to Drum & Bass.
Tune alert : I reckon this will be one of the tunes of the festival season : Major Lazer featuring Vybz Kartel ‘Pon De Floor’ from the production powerhouse of Dave ‘Switch’ Taylor and Diplo.

Achievements are in abundance where Tom is concerned… He helped Aphex Twin secure his first record deal and founded labels such as Evolution, Universal Language, Heard and E3. He’s flirted with chart success with the 2002 club smash ‘Take Me With You’, hosted his own show on Kiss FM, been resident at Ibiza’s most super of superclubs Manumission and tutored the winning DJ Ryan Shaw in ITV’s cult DJ challenge The Joy Of Decks.
As a DJ he’s performed in almost every corner of the globe to crowds as large as 150,000. With his trademark widescreen musical repertoire, he’s spent years championing styles long before they were the norm, helping Ulrich Schnauss develop his career and hosting Hot Chip and Mylo’s festival debut appearances. From ambient to drum & bass, techno to rock n’ roll, his attention to detail allows him to find connections between the most disparate forms of music.
No, Tom is no ordinary DJ. He’s a true scientist, a self-proclaimed research freak who spends his life consuming information in the pursuit of authenticity, clarity and truth. Not just on music, but all his passions. From his love for innovative, simplistic design – he’s currently designing bespoke luxury villas in Italy and a domestic product to help mothers with newborn children – to his flare for fine food and wine. He even considered becoming a chef at point. Fortunately he didn’t, or dance music would be lacking one of its most unique, ardent, inventive ambassadors.

Song for Africa – Oh Africa released on Sunday!
After you guys chose Lovelle as the UK ambassador on the Pepsi-back Akon single “Oh Africa”, the time has finally come!
On Sunday (31st January), the single will be released, and we all hope it gets to number one!

We then went on and partied till the small hours in Camden… I didn’t feel to clever in the morning though!
I also wanna say a big thank you to the Pepsi Max comp winners for coming down and saying hello – top geezers! Anyway just thought you’d like a sneak peek at one of our soundchecks. Hey Pepsi Maxcasters!! We hope you’re dandy and can’t wait to see you all on out upcoming UK tour (check our website for dates www.theenemy.com). We are sure they’ll be lots of crazy moments in the next few weeks but all this talk of touring has got us feeling all misty eyed about past tours! We’ve been looking through some old tour snaps and have complied a little album for you to have a look at and that will hopefully give you a little flavour of what touring with The Enemy is like. The pics include photos from Beachbreak, Glastonbury, Ibiza Rocks (we love IBIZA- want to be there now!!!!) and Summersonic in Japan- mad and wonderful place. Oh and there’s one of some clowns (it’s not us in disguise, honest! We just like clowns) plus check out the pic of two of road crew after Andy and Liam had chucked them in the pool in Ibiza! - Fully stocked washbag – tour is a sweaty process
- Immodium tablets – for when your on the motorway, on the bus and get some inevitable stomach problems. Tour bus rule is no solids, even if you think its runny enough!
- DVD’s – Partridge, The Office, Brass Eye and Human Remains!
- Deck of cards and some poker chips – quickest way to lose your PD’s
- Tour itinerary – to stop you pi**ing the tour manager off and asking a million questions!
(All held together in a bag sturdy enough to be abused and thrown around for a month!)

The Adelaide Shuffle
Not only does water run away down plug-holes the other way in the southern Hemisphere, but their dance moves have a distinct funk of their own. The Adelaide-Shuffle (modified from the erstwhile Melbourne-shuffle) is a spectacle to behold. Kind of like the Running Man, mixed-up with what we used to call the X-man in 1990, then sped-up and stripped of any recognisable “dancing” characteristics and replaced with the unsexy frenetic stomp of a wooden-legged man dealing with too-high a treadmill setting. People seem to bust this local move out at any given moment all over the club, for a burst of about 30 seconds of cardio intensity like a mating-ritual for ephedrine-drunk robots. It’s bad enough when the boys do it (and let’s face it, what dance move isn’t?) but some girls get involved too. It’s a wonder any pro-creation gets achieved at all in Southern Australia. This won’t be seen in a club near you soon. [*sauce got some footage tho…]
E-Cup Bolt-ons
The best self-description of a pair enhanced-breasts I’ve ever heard. Brisbanites don’t mince their words. They also party harder than anywhere else we’ve been this year. And look good while doing it. All year-round sunshine does wonders for keeping-up your beach-bod credentials and yet manage to never take yourself (or indeed anything) too seriously. The Monastery, Brisbane, we salute you. You bring the party.
The Return from Oz
22 hours in the air is just wrong. But coming down for one hour break to visit the toilets in Singapore airport is the most unexpected dose of luxury, your long-haul economy traveller can experience. [*pic attached] They are plusher than any of the hotels we’ve stayed in on this tour. They are nicer than my own bathroom at home. They are nicer than my whole flat tbh. Like when u go into a really flash restaurant loo and wished you lived there. (we all do that….right?). There is even an attendant guy actually cleaning- all the time- instead of offering you Chupa Chups and a £5 squirt of Hugo Boss. My parting tip to anyone flying-out East is to save your ablutions for Singapore airport.. and don’t do any home-improvements before you’ve taken notes there.
